Chef Hamish Pollitt believes that it is the combination of great ingredients and great teamwork that produces great food – crucial when you’re cooking for hundreds of people a day!
China’s flavourful local bounty
Naturally, good cuisine begins with fresh, seasonal ingredients. Shanghai has its share of China’s flavourful local bounty, which includes surprising produce like foie gras, black truffles, all manner of birds, fabulous herbs and unusual fruits. We import what we need to make authentic western cuisine, and make our own breads, ice creams and desserts – and are continually inspired by the flavours of the vegetables and fruits in our neighbourhood markets.
